Sunflower Breakfast Cookies

Ingredients
- 1 Cup Vegan butter of your choice
- 1 Cup Sunflower butter
- 1 Cup Coconut sugar
- 1 Cup Honey
- 2 Tbsp Flax seed meal
- 6 Tbsp Water
- 2 1/2 Cups Banana flour
- 1 Tsp Baking powder
- 1/2 Tsp Salt
- 1 1/2 Tsp Baking soda
Instructions
- Preheat oven to 350 degrees. Line cookie sheet.Combine flax seed meal and water in a small bowl and let sit for 15 minutes.Combine banana flour, coconut sugar, baking powder, salt, and baking soda. Mix all dry ingredients until well combined.Cream softened vegan butter, sunflower butter, honey, and flax seed meal mixture until smooth and well combined.Add wet ingredients to dry ingredients and combine until it forms a dough.Roll dough into small balls, about the size of an ice cream scoop, then flatten a bit on a lined cookie sheet. Top with a topping of your choice (coconut shreds, sunflower seeds, etc)Bake at 350 degrees for 10-15 minutes.
